Grilling a fish - Maldivian style

It’s quite easy to grill a fish and it is tasty as well.

Ingredients:

Fish of your choice.Reef fish are best and my favourite is red snappers.

For the chili paste;

50g dried chillies
20g onion
4 clove garlic
1 tsp black pepper corns
2 curry leaves
2 tsp lime juice
Salt to taste

Remove the scales and stomach, leaving the fish whole with its head.
Make diagonal slashes on both side of the fish.
Make chilli paste by grinding all the ingredients to a smooth paste.
Fill in the slits made on the fish with the paste.
Rub the reminder of paste all over the fish.
Pierce the fish into a skewer if you want to grill over hot charcoal,as it is the best way of grilling and gives the best flavour.
Grill the fish over hot charcoal on turning the fish over half way through until cooked.
Or if you wish to grill in an oven,wrap the fish in an aluminium foil and grill on a pre heated oven on 250c.
It takes about 30 minutes for grilling.
Serve with lemon slices.
